Fasting Diet Vegetable Chilli

If you’re not going to eat this on a fasting day, this veggie chilli does really well with our Smallholder Kitchen new web site cornbread recipe.

Calories

Approx. 80 cals per 100 ml. 240 cals for a 300ml fasting meal serving.

Ingredients

3 medium large onions
Small spray of olive oil
1/2 tbsp ground ginger
1 tbsp ground turmeric (amazingly good for your health)
1/2 tbsp ground chilli
1/2 tbsp garlic powder or 1 tbsp fresh garlic
Splash of water

4 tins tomatoes or passata or combination (1600g total)
150g dried soya mince
4 bay leaves
1/4 cup tomato ketchup
1/2 cup water
2 tbsp soy sauce
2 tbsp Worcester sauce
1 tsp marmite
1 tsp cocoa powder
2tsp strong chilli jam

1 400g tin baked beans in tomato sauce
1 small tin sweet corn (140g drained approx)
2 400g tins red kidney beans drained and rinsed thoroughly
1 400g tin lentils (approx 250g drained weight)
 ——————
1 tsp ground black pepper

Equipment

1 large lidded saucepan large enough for the whole chilli. This recipe makes approx. 3 litres of chilli – you’ll also need some headspace for stirring!

In the photos I have doubled the recipe as I like to freeze it in portions so I am making 6 litres of veggie chilli!

Method

Chop the onions and fry until starting to soften in the smallest spray of olive oil.  Add the spices and continue to fry adding just a splash of water to stop the spices sticking to the base of the pan. Fry for a couple of minutes until onions are soft and coated with spices.

Add the tinned tomatoes, soya mince, bay leaves, ketchup, water, soy sauce, Worcester sauce, marmite, cocoa powder and chilli jam. Cover and cook for 15 minutes, stirring regularly, until the mince has absorbed the flavours and is moist.

Add the baked beans, sweet corn, red kidney beans and lentils. Stir well, cover and cook through for a further 20 minutes, stirring regularly. Add the ground black pepper.

Remove the bay leaves and serve.  This 5:2 Fast Diet Vegetarian Chilli Recipe freezes well and I tend to make large batches and then freeze in individual portions for the fasting days to come.
