This is one of our most popular winter 5:2 fasting diet soup recipes. When its too cold for a smoothie but we want to get the same health benefits without the chill this 5:2 soup recipe is perfect. Also for the raw haters it doesn’t taste raw at all 😁
Try it cold in the summer too if you like savoury green smoothie like I do!
If you don’t have fresh you can use thawed frozen veggies for some of the ingredients (we do this most of the time).
Calories
The soup is very low calorie at about 34 calories per 100g. One entire batch has approximately 290 calories and serves 2 (145 calories each) as a main course or 4 people (72.5 calories each) as a starter.
Ingredients
100g peas
250g cucumber
200g spinach
50g sweetcorn
100 ml soy milk
150 ml water
1tsp bouillon powder
Pepper to taste
Method
Put all of the ingredients in a high speed blender (liquids first) on soup setting or highest speed until desired serving temperature is reached.
Serves 4 as a starter or 2 as a more substantial serving.
