This soup is great for a 5:2 fasting winter meal that takes only a few minutes and uses ingredients from the store cupboard.
Calories
This makes just over a litre (bit less than 2 pints) of soup. It contains about 60 calories per 100ml (this will vary slightly according to your brand of ingredients).
Ingredients
400g can of tomatoes or passata
400g can of baked beans
200ml Soya Milk
Salt
Pepper
1 tsp bouillon powder
3 tbsp tomato ketchup
1 tsp dried Oregano
1/2 tsp dried Dill
Optional: Chilli to taste
Method
Heat all of the ingredients together in a saucepan and blend with a stick blender. Adjust seasoning to taste.
